Description
A third of the world's population depends directly on wheat for their daily diet. The wheat grain is considered a true vegetable "egg" due to its nutritional content, but only when consumed in its whole form.
Whole grains have a high fiber content, vitamins – B1, B2, B3, B5, K and E – and minerals, such as calcium, iron, magnesium, phosphorus, zinc and manganese. Fiber forms a gel that helps the stomach and glucose absorption. White flour pasta has a glycemic load of 37, and wholemeal pasta has a glycemic load of 23.
